Goodness on the Go - Mason Jar Salads

Whether you are a student or in the working world, most of us don’t have the luxury of preparing and eating lunch at home. Beyond sandwiches, it can be a bit of a challenge to come up with tasty lunches that are both easy to prepare and travel well. I love making fresh salads and I have found the holy grail to on the go goodness. It keeps all of the ingredients separate until ready to eat without having to carry 5 separate containers. Cold Weather Salad

With the colder weather still upon us, I find myself still needing to “winterize” my summer salads to make them a bit more filling. My local farmers market has been fully stocked with an abundance of winter squash varieties such as butternut, acorn and delicata and I have been experimenting with adding these and other seasonal vegetables and fruits to my salad rotation.
